For example, what should you eat and drink the day before and the day of a 2k test?

I've done a few before but not since spring of last year. thanks.

a good way to prepare is to eat healthy foods ( veggies, yogurt, pasta) the day before your 2k. you should also drink plenty of water. the day of you should eat a smaller sized meal of mostly carbs and protein. try to stay away form sugary things, they will help you for a short time, but that energy gets burned up really fast. after the 2k you should drink either powerade or chocolate milk to replenish. good luck!
